For my hunter I have a missing SS icon, followed by a count down icon for when the sting hits 5 secs. So i get 5 secs to manage my rotation according.
Hunter mark icon. Focus bar, beast mode notifications( so all my proc 1 at a time procs then a main icon for when there all procing at once). That's all I use for DPS help^ the rest is DBM, Recount, etc. Standard addons. All of the above responses are fantastic, though I have a pretty easy time managing dots and CDs with Bitten's Spellflash, slightly tweaked to my likings. If you have Alts, it also is very helpful with other classes with minimal tweaking needed.

Really, hunters can have Pretty minimal UI in comparison to some classes. Outside of help with the rotation, just find anything that looks appealing, utilizes the least amount of memory, and corresponds with your Alts as seamlessly as possible. I personally use ShadowedUI, Bitten's, Quartz, s.ymaps (is that word okay on the forums?), a few random PvP informants/target frames, and a few quality of life ones. Again, ElvUI, if it appeals to you and your rig can handle it, is very commonly used and has everything you'd ever want.
